We’re moving right along with that Christmas Cookie list. My friends insist that the coconut macaroon be included in the Christmas Cookie Box every year. This already gluten-free coconut macaroon has served me well throughout my pastry career; I’ve put it in an assortment box of miniature desserts; I made it jumbo size and served it in the bakery cases of retail stores; as well as serving it at numerous buffets and catered events. I prefer to make it in this 1 Tablespoon size, but you can make it any size you like. You’ll just need to adjust the baking time to suit the size you pick. And, you can leave these plain in all their chewy, sweet goodness or you can step it up a bit and dip the macaroon in chocolate. I like to do half, but, heck, just throw the whole thing in if you’re a true chocoholic. No wrong way!
The first thing you need for these is ‘almond paste.’ Check out my recipe for ‘Super Easy’ Home-Made Almond Paste here. But, no worries, there’s always the option to buy it and skip this step altogether.
