Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe mangoes, peeled, pitted, and diced
  • Mixed greens or your choice of lettuce
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Cook the Shrimp:
    • Heat a pan over medium-high heat.
    • Season the shrimp with a pinch of salt and pepper.
    • Add a little olive oil to the pan.
    • Cook the shrimp for 2-3 minutes per side or until they turn pink and opaque. Remove from heat and set aside.
