Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 ripe mangoes, peeled, pitted, and diced
- Mixed greens or your choice of lettuce
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Cook the Shrimp:
- Heat a pan over medium-high heat.
- Season the shrimp with a pinch of salt and pepper.
- Add a little olive oil to the pan.
- Cook the shrimp for 2-3 minutes per side or until they turn pink and opaque. Remove from heat and set aside.
- Prepare the Salad:
- In a large bowl, combine the mixed greens or lettuce, diced mangoes, sliced red onion, and chopped cilantro.
- Make the Dressing:
- In a small bowl, whisk together the lime juice, olive oil, and a pinch of salt and pepper.
- Assemble the Salad:
- Drizzle the dressing over the salad and toss to coat the ingredients evenly.
- Add the Shrimp:
- Place the cooked shrimp on top of the salad.
- Serve:
- Divide the salad into individual serving plates.
- Optionally, garnish with additional cilantro and lime wedges.
