Ingredients:

• 1 lb large shrimp, peeled and deveined
• 2 ripe mangoes, peeled, pitted, and diced
• Mixed greens or your choice of lettuce
• 1/2 red onion, thinly sliced
• 1/4 cup fresh cilantro, chopped
• 2 tablespoons lime juice
• 2 tablespoons olive oil
• Salt and pepper to taste

Instructions:

1. Cook the Shrimp:
   • Heat a pan over medium-high heat.
   • Season the shrimp with a pinch of salt and pepper.
   • Add a little olive oil to the pan.
   • Cook the shrimp for 2-3 minutes per side or until they turn pink and opaque. Remove from heat and set aside.
2. Prepare the Salad:
   • In a large bowl, combine the mixed greens or lettuce, diced mangoes, sliced red onion, and chopped cilantro.
3. Make the Dressing:
   • In a small bowl, whisk together the lime juice, olive oil, and a pinch of salt and pepper.
4. Assemble the Salad:
   • Drizzle the dressing over the salad and toss to coat the ingredients evenly.
5. Add the Shrimp:
   • Place the cooked shrimp on top of the salad.
