Vegan Aquafaba Gluten-Free Italian Meringue Macarons

Aquafaba — the liquid from a can of chickpeas — whips into a meringue so stable you can make true Italian-method macarons with no egg whites at all. Since macarons are built on almond flour, they are naturally gluten-free; the challenge is technique, and this method is the most forgiving one.

Ingredients
- 3/4 cup (180 ml) aquafaba, reduced to 1/2 cup and chilled
- 1 cup (200 g) sugar + 1/4 cup water (for the syrup)
- 1/4 tsp cream of tartar
- 2 cups (200 g) blanched almond flour
- 1 3/4 cups (210 g) powdered sugar
- Gel food coloring (optional)
- Dairy-free chocolate ganache or jam, for filling
Directions
- Whip the chilled aquafaba with cream of tartar to soft peaks.
- Boil the sugar and water to 244°F (118°C), then stream into the whipping aquafaba; whip to stiff, glossy peaks.
- Sift the almond flour and powdered sugar; fold into the meringue until the batter flows like slow lava.
- Pipe 1 1/2-inch rounds, rap the trays, and rest 45–60 minutes until a skin forms.
- Bake at 275°F (135°C) for 22–26 minutes. Cool fully, then sandwich with filling and mature overnight in the fridge.
Pro tip: Reducing the aquafaba is the difference between feet and flops — simmer it down by a third and chill it before whipping.
