For the Stir-Fry Sauce:
1/4 cup gluten-free soy sauce or tamari
2 tablespoons gluten-free oyster sauce
2 tablespoons rice vinegar
1 tablespoon honey or maple syrup
1 teaspoon cornstarch (or a gluten-free alternative) to thicken the sauce
1/2 teaspoon minced ginger
1/2 teaspoon minced garlic
1/4 cup water
For the Stir-Fry:
1 pound (450g) flank steak or sirloin, thinly sliced against the grain
2 tablespoons cooking oil (such as vegetable or sesame oil)
1 red bell pepper, sliced
1 green bell pepper, sliced
1 cup broccoli florets
1 medium carrot, sliced
1 cup snow peas or sugar snap peas
Cooked rice or quinoa for serving
Instructions:
1. Prepare the Stir-Fry Sauce:
In a small bowl, whisk together the gluten-free soy sauce, gluten-free oyster sauce, rice vinegar, honey or maple syrup, and cornstarch until the cornstarch is dissolved.
Stir in the minced ginger and garlic, and add the water. Set the sauce aside.
2. Slice and Marinate the Beef:
Place the thinly sliced beef in a bowl.
Pour half of the prepared stir-fry sauce over the beef, reserving the other half. Toss the beef to coat it evenly in the sauce.
Allow the beef to marinate for about 15-20 minutes.
3. Cook the Stir-Fry:
Heat 1 tablespoon of cooking oil in a large skillet or wok over high heat.
Once the oil is hot, add the marinated beef and stir-fry for about 2-3 minutes until it’s browned but still slightly pink in the center. Remove the beef from the skillet and set it aside.
In the same skillet, add the remaining 1 tablespoon of oil.
Add the sliced bell peppers, broccoli, carrot, and snow peas. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
Return the cooked beef to the skillet and pour the reserved stir-fry sauce over the meat and vegetables.
Stir everything together and let it cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the ingredients.
4. Serve:
Serve the beef stir-fry over cooked rice or quinoa.
Garnish with chopped green onions or sesame seeds if desired.
