GF White Chocolate Peanut Butter Krispies

A no-bake bar with a grown-up finish: peanut butter krispie squares blanketed in white chocolate, salty-sweet and gone by Tuesday. The quiet catch is the cereal — classic Rice Krispies contain malt (barley), so a labeled gluten-free crisp rice is essential.
Yield: 16 squares · Time: 20 min + set
Ingredients
- 4 cups (100 g) gluten-free crispy rice cereal
- 3/4 cup (195 g) creamy peanut butter
- 1/2 cup (170 g) honey
- 1/4 cup (50 g) brown sugar
- 1 tsp vanilla
- Pinch of salt
- 8 oz (225 g) white chocolate, melted
- Flaky salt for the top
Directions
- Warm the peanut butter, honey, and brown sugar until pourable; stir in vanilla and salt.
- Fold in the cereal until every puff is coated.
- Press firmly into a lined 8×8 pan with damp hands.
- Pour the white chocolate over and spread to the edges; finish with flaky salt.
- Set 1 hour at room temperature, then slice.
Pro tip: Mainstream crisp rice cereal is malt-sweetened — the gluten-free label on the box is doing real work in this recipe.
Gluten-Free Notes
A quick label-reading reminder: scan ingredient lists for wheat, barley, rye, and malt, and look for a gluten-free claim on anything processed. When a label is unclear, the manufacturer’s website usually settles it.
