Gluten-Free Chocolate Truffles with Hazelnuts and Candied Orange Peel

Proper truffles are just ganache with ambition — dark chocolate and cream studded here with toasted hazelnuts and chewy candied orange, rolled in cocoa like the cobblestones of a Paris chocolate shop. Naturally gluten-free and dangerously giftable.
Yield: About 30 truffles · Time: 45 min + chilling
Ingredients
- 10 oz (285 g) dark chocolate (60–70%), finely chopped
- 2/3 cup (160 ml) heavy cream
- 2 tbsp butter, soft
- Pinch of salt
- 1/2 cup toasted hazelnuts, chopped
- 1/3 cup candied orange peel, minced (check label)
- 1 tbsp orange liqueur (optional)
- Cocoa powder for rolling
Directions
- Heat the cream to a simmer and pour over the chocolate; rest 3 minutes, then stir from the center into glossy ganache.
- Stir in the butter, salt, liqueur, hazelnuts, and orange peel.
- Chill 2 hours until scoopable.
- Scoop teaspoons, roll quickly between cool palms, and drop into cocoa.
- Shake off excess and store chilled; bring to room temperature to serve.
Pro tip: Cold hands make round truffles — rinse in cold water, dry, and work in short bursts.
