Ingredients:

For the Cake:

  • 2 cups gluten-free all-purpose flour
  • 1 1/2 cups shredded coconut
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup coconut oil
  • 4 large eggs
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the Coconut Frosting:

  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup coconut milk
  • 1 teaspoon coconut extract
  • 1 cup shredded coconut

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Make the Cake:a. In a mixing bowl, whisk together the gluten-free flour, shredded coconut, baking powder, baking soda, and salt. Set aside.

    b. In a separate large bowl, cream together the softened butter, coconut oil, and granulated sugar until light and fluffy.

    c. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

    d. Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk. Begin and end with the dry ingredients, mixing until just combined.

    e. Divide the cake batter evenly between the prepared pans and smooth the tops.

  3. Bake the Cake:a. Place the cake pans in the preheated oven and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

    b. Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

  4. Make the Coconut Frosting:a. In a large mixing bowl, beat the softened butter until creamy.

    b. Gradually add the powdered sugar, coconut milk, and coconut extract. Beat until the frosting is smooth and well combined.

  5. Assemble the Cake:a. Place one of the cooled cake layers on a serving plate.

    b. Spread a layer of coconut frosting on top of the first cake layer.

    c. Place the second cake layer on top and frost the top and sides of the entire cake with the remaining frosting.

    d. Sprinkle shredded coconut on top and press it onto the sides of the cake to coat it with coconut.
