gluten free farina all purpose flour blend

This is the house blend that gave this site its name: a farina-style, all-purpose gluten-free mix built on superfine rice flour with just enough starch and whole grain to behave like the classic bag of flour. Mix a big jar once and every cookie, muffin, and pancake recipe here falls in line.

Yield: 6 cups blend · Time: 10 min

Ingredients

  • 3 cups (480 g) superfine white rice flour
  • 1 1/2 cups (240 g) brown rice flour
  • 1 cup (160 g) potato starch
  • 1/2 cup (60 g) tapioca starch
  • Optional at baking time: 1/4 tsp xanthan gum per cup of blend

Directions

  1. Whisk all four flours in a large bowl for a full two minutes — uniformity is the whole job.
  2. Transfer to an airtight container; shake before each use.
  3. Substitute by weight 1:1 for all-purpose wheat flour in cookies, muffins, pancakes, and quick breads.
  4. Add xanthan gum only when a recipe doesn’t already include it; yeast breads want 1/2 tsp per cup.
  5. Store 3 months in the pantry or 6 in the fridge.

Pro tip: Weigh, don’t scoop — rice flour packs unpredictably, and the scale is why this blend behaves the same every time.

Gluten-Free Notes

As always on this site: ingredient formulations change, so verify the gluten-free label on every packaged product you use — especially anything milled, malted, or made in a shared facility.
