Ingredients:
For the Muffins:
- 2 cups of gluten-free all-purpose flour
- 1/2 cup of granulated sugar
- 1 1/2 teaspoons of gluten-free baking powder
- 1/2 teaspoon of gluten-free baking soda
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground nutmeg
- 1/2 teaspoon of ground cinnamon
- 2 large eggs
- 1/2 cup of unsalted butter, melted
- 1 cup of plain Greek yogurt (ensure it’s gluten-free)
- 1 teaspoon of pure vanilla extract
For the Cinnamon Sugar Coating:
- 1/2 cup of granulated sugar
- 1 teaspoon of ground cinnamon
- 1/4 cup of unsalted butter, melted
Instructions:
- Preheat Your Oven:
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper muffin cups.
- Prepare the Muffin Batter:
- In a large mixing bowl, combine the gluten-free all-purpose flour, granulated sugar, baking powder, baking soda, salt, ground nutmeg, and ground cinnamon. Mix well.
- Add Wet Ingredients:
- In another bowl, whisk together the eggs, melted butter, Greek yogurt, and pure vanilla extract.
- Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.
- Fill the Muffin Tin:
- Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake:
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Cinnamon Sugar Coating:
- While the muffins are baking, mix the granulated sugar and ground cinnamon for the coating in a small bowl. In another bowl, melt the 1/4 cup of unsalted butter.
- Coat the Muffins:
- Once the muffins are baked and slightly cooled, dip the tops in the melted butter, allowing any excess to drip off. Then roll them in the cinnamon sugar mixture to coat them evenly.
