Gluten-Free Red Velvet Waffle Donuts with Cream Cheese Icing Drizzle

Half waffle, half donut, fully ridiculous in the best way: cocoa-red batter crisped in the waffle iron and striped with tangy cream cheese icing. They’re a birthday-morning tradition waiting to happen, and the gluten-free batter behaves perfectly in the iron.
Yield: 10 waffle donuts · Time: 35 min
Ingredients
- 1 1/2 cups (210 g) gluten-free all-purpose flour blend
- 3 tbsp cocoa powder
- 1/4 cup (50 g) sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1 cup (240 ml) buttermilk
- 1/4 cup (60 ml) melted butter
- 1 tbsp red gel food coloring
- 1 tsp vanilla
- Icing: 3 oz cream cheese + 3/4 cup powdered sugar + 2–3 tbsp milk
Directions
- Whisk the dry ingredients; separately whisk eggs, buttermilk, butter, coloring, and vanilla.
- Combine into a thick batter and rest 5 minutes.
- Cook in a hot, greased waffle maker until crisp, 3–4 minutes each.
- Beat the icing ingredients smooth.
- Drizzle the warm waffle donuts generously and serve immediately.
Pro tip: Gel coloring gives the deep red without thinning the batter — liquid coloring will cost you crispness.
