Gluten-Free Christmas Wreaths

Those glossy green cornflake wreaths from grandma’s cookie tray had one hidden problem: standard cornflakes are malt-flavored, which means barley. A gluten-free cornflake fixes the tradition — same marshmallow gloss, same cinnamon-candy berries, zero gluten.
Yield: 18 wreaths · Time: 25 min + set
Ingredients
- 4 cups (130 g) gluten-free cornflakes
- 4 tbsp (55 g) butter
- 4 cups (200 g) mini marshmallows (check label)
- 1 tsp vanilla
- Green gel food coloring
- Red cinnamon candies (check label)
- Nonstick spray for hands
Directions
- Melt the butter and marshmallows low and slow; stir in vanilla and enough green gel for a deep pine color.
- Fold in the cornflakes gently to keep them whole.
- With sprayed hands, shape small mounds into rings on parchment.
- Press on cinnamon candy ‘berries’ while sticky.
- Set 1 hour; store airtight in single layers.
Pro tip: Regular cornflakes’ malt flavoring is barley-based — this is one of the sneakiest gluten sources on the holiday table.
