Gluten-Free Hot Buttered Rum

Hot buttered rum is a fireplace in a mug: spiced butter batter whisked into dark rum and hot water until frothy. Distilled rum is gluten-free by nature, so this winter classic needs zero adaptation — just a batch of batter parked in the fridge for cold nights.
Yield: 1 mug (batter serves 12) · Time: 10 min
Ingredients
- Batter (12 drinks): 1/2 cup (115 g) soft butter, 3/4 cup (150 g) brown sugar, 1/2 tsp cinnamon, 1/4 tsp each nutmeg and cloves, pinch salt, 1/2 tsp vanilla
- Per mug: 2 tbsp batter
- 2 oz dark rum
- 3/4 cup (180 ml) very hot water
- Cinnamon stick to stir
Directions
- Beat the batter ingredients until fluffy; refrigerate up to a month.
- Drop 2 tablespoons of batter into a warm mug.
- Add the rum, then the hot water.
- Whisk with a fork until frothy and finish with a cinnamon stick.
Pro tip: Batter also melts magnificently over baked apples — the jar earns its fridge space twice.
